Autumn and Halloween in particular is a time that makes me think of America more than any other point in the year. Having lived there for a year and experienced a few Halloween festivals in the US, there’s something special for me about the run up to the day itself and celebrating with some autumnal favourites. We have had some brilliant trips to America around Halloween with kids. Most notably a fun trip through Georgia and Florida with kids where we celebrated Halloween on Saint Simons Island. It was one of the best we’ve had. So we have put together this recipe for pumpkin and peanut butter cookies with chocolate chips for a lovely bite of Halloween fun.
About homemade pumpkin and peanut butter cookies with chocolate chips
One of my favorite things is the abundance of pumpkin products you can get in the US. Everything from (my favorite) Pumpkin Ice Cream to savory versions such as pumpkin and ricotta pasta dishes.
We love cooking with pumpkin and there’s no finer excuse for baking up some delicious cookies. Here’s our recipe for our tasty pumpkin and peanut butter cookies with chocolate chips.
A real treat for cold autumn nights.
Ingredients:
- 300g of white sugar
- 200g of soft butter (or dairy free spread)
- 180g of peanut butter
- 1 can of pumpkin puree
- 1 tsp vanilla extract
- 15g of freshly grated ginger
- 600g of flour
- 2 tsp of baking powder
- 1 tsp cinnamon
- 1 tsp all spice
- 150g dark chocolate chips
How to make our pumpkin and peanut butter cookies
- Heat your oven to 180 degrees C.
- Beat the butter in a mixer with the sugar until smooth.
- Take the flour, baking powder, cinnamon and all spice and mix in a separate bowl.
- Add the pumpkin puree and vanilla extract and to the butter mix
- Add the flour mixture to the butter mixture and slowly beat together.
- Stir in the peanut butter
- Using a spoon scoop out a generous spoonful of mixture onto a greased baking sheet.
- Add chocolate chips to the top of the cookies
- Bake for around twenty minutes until the edges of the cookies brown.
- Remove from the oven and allow to cool. Enjoy!

These pumpkin and peanut butter cookies with chocolate chips are so tasty and the perfect bite of Halloween.
- 300 grams white sugar
- 200 grams soft butter
- 180 grams peanut butter

- 15 grams freshly grated ginger
- 600 grams flour
- 2 tsp baking powder
- 1 tsp cinnamon
- 1 tsp all spice
